She likes to cook but she always cooks Cuban food or some type of dish with a Caribbean taste. So I told her for mothers day that she could cook me a good Texan dish...I chose King Ranch Chicken.

my mom cooks king ranch casserole...got grilled chicken, cruched up tortilla chips, cheeses, onions, peppers, etc. etc...is that what you had? cuz i love my mom's king ranch casserole...

Yeah it was a casserole and it was amazing... I could eat it every day for the rest of my life. I'm not sure how healthy it is but geebus I don't really give a darn.

everytime i come home from school, that's the thing my mom cooks on the first night. she knows it's my favorite. :p

If there is one typically Texas dish that I despise, it's King Ranch Chicken. I can't stomach it. I realize that I'm in the minority, and I don't think I am better than everyone else. KRC just makes my stomach churn.

Chicken, RoTel, cream of mushroom soup, some corn tortillas, bell peppers, and maybe one jalepeno are the base, with different recipies. I look at it as a very white attempt at an enchilada.

When I was little I used to ask for chicken a la mode - when I meant chicken a la king - both of which are nasty.

On another note: Did you know there is a bill in front of the Texas House to change the name of TAMUK back to Texas A&I? Its HB4647. Was already passed by the Senate as Bill 2376 I believe.

I'd get a kick out of it if passed, but I doubt it would change much.

I guess I'm going to hell because my mom cooked on mothers day... I'll see ya'll there. If I had any type of control of the situation it would have happened differently but considering everyone else in my family is long gone and living in other places my mom doesn't have anyone to take care of... so she decided that she wanted to cook for me. My mom and I are the only ones in my immediate family who live in Austin.

Just passing on the stories I have heard forever about it. I tried to fix it once and my family looked at me like I poisoned them. Never have I tried it again.

I do make a dish called chicken/turkey sopa. It has the chicken (not boiled, I use the meat from a roasted chicken), fresh green chiles, sour cream, cheese and tortillas. No soup though. It comes from El Paso and several families their claim to have started it. Not the same.

My family likes their food separated. Tough crowd at times.
