I fancy myself a good cook, but lately I've found my own cooking...blaze (blah-zay). So, I was wondering if anyone had any good recipes or cooking ideas, so as to spice up up my food life? I have some I'm willing to share, myself. ;) Women and cooking moms welcome.

Low-fat bean-less chili - (great for burgers)

2lbs of Lean Ground Beef. (Cook, and rinse)
1 Tablespoon of flour
1 1/4 Tablespoon of corn starch
1 cup of beef broth (low-sodium)
1/2 cup of water (approx.)
1 tablespoon white vinegar
1/4 of a whole fresh onion, diced
2 teaspoons salt
1 packet of sugar substitute
1 teaspoon paprika
1/4 teaspoon garlic powder
1 teaspoon of cumin
3 tablespoons chili powder
1/4 teaspoon of cayenne powder

This next one is good. I recommend it for parties.

Jalapeno Poppers

(?) Jalapenos (preferably the actual pepper, not sliced ones)
(?) Sharp Cheese, Shredded.
(?) Creme Cheese.
(?) Sausage.
(?) Tooth Picks.
(?) Bacon.

Servings depend on amount of people.


Set oven for 325- (I use cupcake pans for cooking these)

First, if you have whole peppers- cut the tops off.
2nd- remove the innards, with a knife or spoon. Try not to tear or break outer the pepper.
3rd- In a bowl, combine 1/2 roll of sausage and 1/2 bag of your cheese of choice. (or however much you want, it is your food ;))
4th- Once meat and cheese are mixed, stuff it into the pepper, leaving about a fourth empty.
5. wrap & toothpick the pepper in 1/2 length bacon strips, so that it circles the entire thing.
6. Stick on pan.
7. Place in oven - 15 to 20 minutes.
8. Remove from oven, and fill the remainder of the peppers (1/4) with creme cheese.
9. Place back in oven- 15 to 30 minutes.
10. Peppers are done when bacon is cooked, and creme cheese in is browned.

I don't have a picture of my own (which are awesome), but I have a picture of someone else's, and they look pretty much the same.

I suck at cooking....

Healthy, easy recipes welcome.

Seems like my meals consist of a rotation of Whole wheat pasta, brown rice, chicken, ham, and turkey...... just mixed with some sort of sauce. hahaha.

It gets old........

My kids love Caldillo in the wintertime.

5 lbs. rump roast
5 or 6 golden potato's (yukon Gold)
1 white onion
8 whole long green chili's
Garlic
Cumin
salt and pepper
Monterey Jack cheese
Flour Tortillas
Beef Broth
Chili powder

In the morning season the roast with chili powder, garlic, cumin, salt and pepper. Add onion slices and cover with beef broth. I add a little red wine for flavor. Cook at 325 all morning in a covered roasting pan. When done remove from oven and shred beef. Return beef to broth mixture and put in refrigerator. At 5:00 remove from refrigerator and skim off fat. Peel and cut up potatoes and add to the pot, cut whole green chili's length wise and add as well. Add more beef broth if needed. Add additional seasonings for taste.Cook at 350 until potatoes are done. Shred Mont. Jack cheese and sprinkle on warm soup. Butter a warm flour tortilla and dip in the broth.

If you do not have homemade beef broth use Progresso's and I will add a couple of cans of Campbell double strength beef broth for more flavor.

I know how to make low fat desserts. I am pulling these recipes out of a notebook I have which has a little over 50 or so recipes.

Low-fat Apple Fritters

1/2 cup all-purpose flour
2 packets of sugar substitute
1 teaspoon of brown sugar
Non-fat cooking spray
1/8 tsp salt
1/2 cup egg substitute
1/4 cup fat-free milk
1 tsp vanilla extract
¼ teaspoon of cinnamon
2 apples, peeled, cored and grated.


In a bowl: mix flour, sugar, salt, egg, cinnamon, milk, vanilla, and apples. Mix well, unless you want the apple to coat it.

Over medium heat (skillet), spray Teflon pan with non-fat spray.

Drop 1/8 of mixture on pan, (I used 1/4 measuring cup) and fry till golden brown on one side. Flip, repeat.

Healthy "Rice" Krispies

3 tablespoons of "light" or "low fat" butter.
Non-fat cooking spray.
1 box (10-12oz) of sugar free or lightly sugared brown puffed rice (about 6 cups.)
1 bag of mini-marshmallows. (4 cups)

Heat butter (pan, microwave, eh...) and pour in bowl.
While still hot/warm, place marshmallows in the bowl and stir/liquefy.
Then, add puffed rice.
Coat a small baking dish or pan with non-fat spray, then add rice/butter/mellow mixture into pan.

Level it, and cool cut and eat. I add cinnamon, and sometimes brown sugar, if you're feeling sinful. ( <-- that was incredibly gay)

DIET TORTILLA PIZZA

Yum. Need I say more?

Good-Sized Tortilla (depending on hunger...about the size of a large burrito.)
Pizza Sauce (Ragu/grocery brand, or homemade as I have a recipe)
Portobello Mushrooms (at this point, you can go wild with the ingredients) (opt.)
Red Onions. (opt.)
Green Peppers. (opt.)
Black Olive. (opt.)
Adding meat isn't a bad idea, but that is totally up to you.
Light Mozzarella cheese, low on fat.


Set oven heat to 400F.

1.Lay out one tortilla on a pan, with pizza sheet.

2.Place pizza and sheet in oven for exactly 1 minute.

3.Remove from oven, and flip tortilla.

4.Add toppings and sauce, at your pleasure.

5.Re-insert pizza into oven and bake for about 7-10 minutes, or until cheese is thoroughly melted or outside of tortilla is crispy.

I have one of those Jalapeno holders for the grill. http://www.irondesert.com/?gclid=COWAgre5nJoCFRCdnAod21yP8w Take large jalapenos, Cut of the stem end, take an apple corer and gouge out the inner stuff and shake out the seeds, fill the pepper with colby jack (I get the cheese sticks) stand the pepper up in the holder that goes on the grill,drape a half piece of bacon over the top and put on your grill till done..Ummm Ummm Ummmm!

2 Lbs ground turkey
1 LB sage breakfast sausage
2 Tbsp butter
1 large Texas sweet onion( diced)
1 red bell pepper( diced)
2( or 3 or 4) minced jalapenos
1 Tbsp minced garlic
3 Tbsp Cumin
3 Tbsp Chili Powder
1 Tbsp Lawry's Seasoned salt
1 large can crushed tomatoes
1 small can tomato paste
2 bottles Shiner Bock Beer
salt and pepper to taste

6 large buns from a bakery
grated cheese
sour cream

brown all meats in a skillet.
drain well and dump into large crockpot
melt butter in skillet
cook onion and peppers until onion is translucent- dump into crockpot
add all remaining ingredients and cook on "auto" for 4-6 hours

hollow out the buns and serve chili inside the bun with a dollop of sour cream and the cheese

enjoy with the 10 shiners you have left..

Chili is not supposed to have beans in it. I openly shared an excellent cornbread recipe and LPMom has used it since and made a $mil selling it in Lufkin. Do I get a thank you or any proceeds or royalties?

Caucasian Mountain Grilled Skewers (Shashlyk)

1 1/2 pound beef sirloin, leg of lamb, or pork shoulder (can combine beef and lamb)
1 cup red wine
1/2 cup olive oil
1/4 cup red wine vinegar
1/4 cup pomegrante juice
4 cloves garlic, minced
1 white onion, cut into chunks
1 tablespoon ground fresh coriander seeds
3 sprigs fresh dill
several fresh mint leaves, chopped
1/4 cup fresh Italian (flat leaf) parsley, chopped
salt and pepper to taste
3 bay leaves

Cut the meat into 1 inch cubes. Make sure and select meat with some fat on it and include some fatty pieces. Marinade the meat in the wine, vinegar, oil, garlic, onion, and herbs for at least six hours and up to 24. The longer the marinade, the more flavorful the meat will be.

Heat your grill to medium-high, using lump charcoal or hardwood if possible. Not mesquite, but oak or pecan would be perfect. You want to get it where you can hold your hand about two inches above the grill for maybe 3 seconds before pulling away.

Drain the meat and thread onto skewers with the chunks of onion. Maybe add some red or green bell peppers if you like. Season the skewers with a bit of fresh pepper and kosher salt, and brush with a bit of olive oil. Grill until the meat gets charred, about 10 minutes for well done like Armenians and Georgians like their meat. A bit less for beef and lamb.

Unskewer the meat onto a platter lined with pita bread and squirt with fresh lemon juice. Eat with plenty of chopped raw onion, cilantro, and parsley.

Firebird's Pot of Beans

1 lb of pinto beans
4 cloves garlic
1 red onion
2 serrano chiles
1/4 lb salt pork
1/2 link smoked German/Polish sausage
4 strips bacon
chili powder
salt
fresh cracked pepper

Rinse the beans to make sure there aren't any rocks, dirt, or twigs. If you want, you can soak overnight to speed up the cooking.

Slice half the onion then, mince the garlic, and chop up one of the serranos. If you don't like it too spicy, seed the pepper, but I leave the seeds in. Slice the salt pork very thin and rinse it as well. Chop the sausage into one inch chunks. Throw it all in the pot, cover with water, and crack plenty of fresh pepper into the pot. Bring the pot to a boil over medium low heat, then dial back to low and let simmer. Make sure the beans are always covered by water, add more hot water if you need to.

Check every now and then and after a couple of hours the beans should start getting soft. Slice the other half of the onion then, then cook it with the bacon in a skillet, but don't crisp it-- cook right up until then, then dump the bacon and onion and grease into the pot. This will add a whole different layer of taste to the beans. When the beans are tender to your liking, add salt and chili powder to taste. Never salt the beans before they get tender or you will have tough beans.

Hunterbunter's Migas

heat up a tablespoon of butter and a tablespoon of olive oil in a large skillet. get some corn tortillas and cut them up into small pieces and throw them into the skillet and saute it all until they get soft. cut up pieces of onion and toss in to saute also.

**meanwhile**
get 4 eggs and beat them with some salsa. pace picante sauce is what i usually use. when ready, pour the egg mixture into the skillet with the tortilla mixture and scramble the eggs until done. turn off stove and sprinkle shredded cheese over the migas.

now you're ready to eat migas. I usually add some salt, pepper, and ketchup. :notworthy
