Preparation
In a blender or food processor, whirl 1 rinsed, stemmed, and seeded fresh jalapeņo chili (1 1/2 oz.) and 3/4 cup mayonnaise until smooth.

i guess my confusion is why'd he have to blend it. why not just put the mayonnaise on the bread and put the jalapeno on top?

You get more of a "even spread" instead of a couple or 3 jalapenos thrown on a bun..And if you load up on the jalapenos most of the time alot of them fall off...Then, one bite you might get intense pepper action while the next bite is pepperless...:D

Great for Bugers also...

Sounds like you need to head to Chuy's and try their spicy jalapeno dip. It doesn't cost extra but they won't serve it to you unless you ask for it. I know there is two Chuy's in Dallas and four or five in Austin and the surrounding area.

Basically the exact same thing you are talking about taken to another level and perfected. It is delicious.

I really like the onion mayonnaise they put on the Ultimate Cheeseburger at Jack-In-The-Box. If I could find that stuff in the store I'd buy the whole shelf out.

Not on hamburgers. Mayo on hamburgers is for sissys and yankees. Texans put mustard on a hamburger.

I don't know about that.....maybe from your youthful perspective, but to me, it's a different one.

Back in the early-mid 60's, around Garland and Sachse, most everybody used mayo or Miracle Whip (Miracle Whip because Kraft Foods as the largest employer in Garland and the guys who worked there tended to use the products they made)....almost everybody.

It wasn't until McDonalds and Burger King and Jack-In-The-Box came to Garland in the mid-late 60's that ketchup and mustard became common on burgers.

Just a little history you couldn't have possibly known......until Mickey D's and The King and Jack moved in, mustard was for hotdogs, around here.

As for me now, at home, Miracle Whip and sometimes with mustard, at Mickey D's, Mayo, at my favorite burger place, Mayo and mustard.

Ingredients
1 medium jalapeņo pepper, seeded (about 1 tablespoon)

2 Tbs reduced fat mayonnaise

6 oz fresh tuna, coarsely chopped

2 scallions, sliced (about 3/4 cup)

1/4 cup frozen chopped onion

salt and freshly ground black pepper

olive oil spray

2 whole wheat hamburger rolls (about 3 ounces)

1 small tomato, sliced

2 romaine lettuce leaves

Directions
Chop jalapeņo peppers in a food processor fitted with a chopping blade. Remove and mix with the mayonnaise. Set aside. Without washing the food processor bowl, add the tuna, scallions, and onion and pulse several times until ingredients are finely chopped. Add salt and pepper to taste. Form into 2 patties, about 4 inches in diameter and 1/2 inch thick. Heat a nonstick skillet over medium-high heat and coat with olive oil spray. Add the burgers and cook 2 minutes. Turn and cook 2 minutes longer. Place each burger on the bottom half of a hamburger roll. Place several slices of tomato on each burger and lettuce leaves over the tomato. Spread the mayonnaise on the top half of the roll and close.

Variation: Canned jalapeņo peppers can be used instead of fresh.

Variation: Whole grain hamburger rolls can be substituted for whole wheat.

A real burger

Butter the bun then toast it.

Grilled Onions, Lettuce, Tomato, Beet. Cucumber (sometimes add one or a Combo of each - Bacon, Pineapple slice or Fried Egg)

Ketchup (tomato sauce) or BBQ Sauce.

Cheese. (real not processed, either mild or aged)

Meat is well done.
