ABTs (Atomic Buffalo Turds) - don't ask about the name haha
jalapenos - halved length ways and seeded
cream cheese mixed with shredded cheddar
lil smokey sausage in each jalapeno half
wrapped in bacon
smoked for 45 mins - 1 hour

I wonder what I could sub for the cream cheese. I'm not a fan, but everything else looks yummy.

Not sure about it being good for tailgating but:
chicken strip or steak finger tacos
just take some chicken strips or steak fingers and dice them up. place them in a large warm tortilla (either fajita sized for tacos or the really big ones for burritos). add lettuce, diced tomatoes, sliced black olives, green onions, shredded cheddar, ranch and green goddess salad dressing, and even avocado........btw, i don't care for spicy food, but i am sure adding some pico de gallo or salsa to the taco would hit the spot for the heat lovers out there.
bbq kabobs
grill up, cast iron pan, some little smokies (with your favorite sauce) and pineapple slices. Alternate on the kabobs little smoky, pineapple, cheese cube, cherry, and maybe a hot pepper if u like them
Corn on the cob
The night before, individually wrap corn on the cob with butter, salt, pepper, and your favorite seasoning in some foil. Place in an ice chest with ice and leave it in the garage all night and day. Then grill it up at your tailgate. The corn should be absolutely juicy.
fajitas
rub the fajitas with salt, pepper, garlic powder and comino. Place the strip in a gallon sized ziploc. squeeze the juice of several limes into the back. Add some sliced onions, and red, yellow, and green bell peppers. Marinate throughout the entire day. Grill it up and serve with your favorite toppings.
beans
boil about 2 lbs of pinto beans. add salt, pepper, onions, garlic, comino, chili powder, bacon, and if you want it spicy, your favorite chile peppers. continuously add water to the beans as they simmer on medium heat until the gravy is nice and thick and the beans are tender throughout.

Kabobs- sirloin, red onion, cherry tomato, bell pepper, pineapple, maraschino cherries, and mushrooms.
Marinate the meat overnight in soy sauce, ginger, honey, and vinegar.

I was at a TCU-SMU game at SMU...they had osterich...Like the high life commercial says osterich aint a burger its a bird LOL...I like those jalapeno poppers...If you like stayin up all night then cook some Brisket and Ribs and do some good ol potato salad

Kabobs........cubed brisket, shrimp, scallops, cubed chicken, zucchini, squash and beets. Marinated in my own sauce (I ain't tellin) and seasonings, wrapped in foil and put over the grill with hickory charcoal.
Strawberry, black cherry, dr. pepper soda for nondrinkers.........
Enough about me, don't push or try to bum rush...lol

I've known some people bring a large drink cooler with LEMONADE written in big, black, bold letters on it. It wasn't exactly filled with lemonade.

Oh my gosh, these look delicious!!!
I'm a big fan of brat's!! My cardiologist isn't keen on me eating to many of them, but nothing taste's better on a cool fall day :D

Great if you wanna cook it ahead of time. It usually takes me 12hrs to smoke ribs, even longer for a brisket. I prefer quick dishes when I tailgate, now the time my brother in law decided he wanted to roast pig at the BYU UTAH game - that was simply showing off

How many hours ahead of time did you have to get there in order to roast the pig?
And yeah you are right it would take forever to smoke ribs.

We smoke the ribs at home during the day and then wrap them. Heat them up when we get to the tailgate on the grill. Same with brisket or pork.

And to think that my best tailgate experience was just eating hamburgers and hotdogs and beer brats before a game one time. We marked off 3 parking spaces so we could grill and then one for the car and the other for the grill.

The tailgaters at FM have a huge smoker and a huge grill and we will do hamburgers and hotdogs one week, fajitas the next and then for the Mound showdown we go all out with the ribs, brisket, chicken, sausage. If it is at UNT again you should come by.

I hope it is. I don't want to go all the way to SMU, I don't know wherelse they would have it. We did just fine at UNT last year. I'll let you know. My son goes to UNT and he and all his friends came to our tailgate last year. You would be more than welcome if you are not going to the Trinity game.

I've tried tailgating at UNT games but it really isn't that fun. Mostly a bunch of students just getting drunk. More about the beer and less about the food.
There was an guy out there that had a huge grill and was grilling and made our little grill look like nothing.

We will talk as the game gets closer and we know were it is at.
That is why I like high school games. you don't have to deal with the drunks.

Actually yes, yes I have but it was early morning. ;)
There have been a few games at FM were people have shown up drunk. I don't understand it, it's for the kids.

I was just kidding - though I'm sure it happens. I'm sure glad alchol isn't served at these HS venues. Makes it much more family friendly vs a proffesional sports atmosphere

I like that the college and pro stadiums don't sell it when the high schoolers play at their stadiums. It is just wrong to cheer for 15,16,17, 18 year old kids drunk.

I'm trying something new tonight. Making Cheese Steaks. Pre-cooked the meat, peppers and onions. Take a 6" hoagie roll, put melted butter on it. Pile on some Cheese Whiz, then put the meat and pepper/onion mix. Had one for lunch. It was good.

Any other ideas? I'm gonna start trying out ideas so next season I'll have them down. These look delicious by the way. :heli:
